Spinach Ziti |
Ingredients:
8 oz. Penne Rigate Pasta
1 can Muir Glen diced tomatoes with italian herbs
1 can tomato paste
1/8 tsp. red pepper flakes
8 oz. fresh spinach, chopped
4 oz. cream cheese
1/8 tsp. ground nutmeg
2 cloves garlic, minced
1/4 oz. dried basil
Directions:
1. Bring a large pot filled with water to a boil. Add pasta and cook until tender but firm, about 12 minutes
2. Meanwhile in a medium non-reactive pan, combine tomatoes, tomato paste, garlic, pepper flakes, & basil. Heat through on medium-low.
3. Drain pasta and return to hot pan. Add spinach, cream cheese and nutmeg. Cook, stirring over low heat until spinach wilts. Pour tomato sauce over spinach ziti. Stir and toss gently to mix.
